â–² How to embark on the road of creative dessert chefs?

Because you like to travel, you must treat yourself with local food, and dessert is always the most enjoyable memory. Desserts in every place have their unique regional temperament. Nanjing, where I live, has traditional desserts and imported French desserts. I hope that beyond the boundaries of techniques and forms, I will create a contemporary creative dessert belonging to Nanjing, so that more people can feel the sweetness of the city.

▲ In the era when “this idea” must be “creative”, what do you think of the concept of “creative dessert”?

Desserts are our expression of the world and the medium through which we convey oriental delicacies and aesthetics. French techniques + local ingredients + oriental aesthetics have made the contemporary creative dessert of Yue House. Oriental culture is the soil of the banquet desserts, the local ingredients let it take root, and the French technique is a way to the contemporary.

â–² Do you think personality and dessert production are related? Is everyone suitable as a creative dessert chef?

? There is a relationship, in a broad sense, one side of the water and soil to support one person, character map and the level of crafts are inextricably linked. I can only say that in addition to skills, we also need creativity, from constant experimentation, accumulation, experience and experience of life, so it varies from person to person.

â–² The dessert name of the Yue House food list is very poetic. Can you introduce us one?

Mo Zhen is the most representative all-season dessert in Yueting. Inspired by the traditional snacks of Nanjing - red bean wine. We creatively converted the wine into rice wine mousse and presented the red bean as a red bean. Together, it is both a familiar taste and a new experience. Mo Zhen concentrated on the inheritance of local cuisine, respect for traditional techniques and a new way of interpretation.

▲ You define “Yuefang Food List” as “luxury leisure”. The production and taste of dessert is a ritual lifestyle. Can you understand this?

? Desserts are leisurely and leisurely. If you can leave your thoughts and leave a unique time and space for "eat", this is a luxury leisure. At the same time, seasonal ingredients, six desserts per season, reflect the sense of ritual from the disc design, presentation order, and taste.

â–² Have you ever thought about teaching your dessert ideas and techniques?

With this plan, I hope that more people will understand the production of desserts, make desserts a part of daily life, and resonate with those who love life. However, at present, there is a lack of skills, but I still have to cultivate myself.

No, the process of initial exploration is indeed difficult, and day-to-day labor is also taken for granted. Nowadays, more is the sense of accomplishment that dessert brings to me.

▲ Do you have the idea of ​​opening a branch and making the brand bigger?

Yes, but not because the brand is bigger, but the store is really too small, and many times the guests need to line up.

â–² From the dessert to the dessert space, you can see that Yueshe tries to create an experience with oriental aesthetic rituals. Do you pay attention to your own wear when you work and privately?

As a sweetener, work takes up most of my time, so the “workwear” type of dress is more suitable for my professional requirements and habits, with comfortable, simple and capable basic standards. At the same time, in the face of the guests of Yue House, I hope to show the characteristics of clothing with oriental aesthetics.

â–² What is your personal taste in dress?

The natural and casual style is more suitable for me. I don't want to be bound by the labels of elites, luxury, and exquisite. I am connected with food, find the original taste, and find the match and balance with the self.

â–² Can you recommend several seasonal desserts?

This year's summer food list is based on the theme of "Let's go down the temple, sit on the poor mountain", from the "Lin Quan Gao Zhi" of the Song Dynasty. The six desserts show the beauty of the various water-related objects of the summer. For example, the floating life uses the crystal of the Japanese Shizuoka honeydew melon, the aloe vera, and the "Lotus Leaf" made of pistachio, like the summer lotus pond. Another example is the pool, three flavors of sandwich (red fruit, pineapple, sea salt cheese) are wrapped in three kinds of tea-flavored mousse, resembling three stones, with the meaning of dry mountains and rivers.
